Menu Plan Monday 2/3
This is more of a menu re-cap of the last week, as I have found lately that we eat off the menu list but never on the days I plan to. I also am trying to keep track of the cost per meal in order to help cut the food budget yet still serve favorites.
Sunday - Star pasta aka Pastina cooked with carrots, chicken, diced onion and chicken broth served with green salad
Price for dinner - 6.25 or 1.04 per serving ( 6 people)
Monday- 3- Cheese Lasagna made with homemade noodles ( way easier than I ever thought and so yummy)
Price for dinner - 30.25 to make 3 Lasagnas one to eat two to freeze. Each Lasagna was 10.08 to make or 1.26 per serving ( 8 people)
Tuesday- Hot turkey sandwich w/ rice and peas, fresh veggies
Price for Dinner- 8.50 or 1.41 per serving ( 6 people)
Wednesday- Hot dogs, fresh veggies, mac and cheese
Price for Dinner- 8.00 or 1.33 per person ( 6 people)
Thursday - A little bit of this a little bit of that otherwise known as Leftover Day
Price for Dinner - zero as it was leftovers from other nights.
Friday- Pizza Night w/ fresh veggies, the one night I don't cook as my 17 year old son is the master pizza chef around here
Price for Dinner- 12.50 for 3 large pizza's or 1.38 per person ( 9 people)
Saturday- Sub sandwiches for lunch and since the older kids were gone for dinner, leftover pizza for the rest of us.
Price for Dinner- 15.00 or 2.14 per person
So the average cost of dinner for the week per person was 1.38 ( including milk)
Also to add per meal per person 16 cents for milk.
* The reason the number for meals flexes is sometimes adult children come home to eat and some things my pans serve 8 so we plan on having leftovers.*

2013 Spring/ Summer Menu
I like to plan a six week menu at a time I have one for the Fall/ Winter and one for the Summer/ Spring.

The kids take turns helping to cook dinner. Monday's is my son Nolan, Tuesday's is Aidan, Wednesday's Pat, Thursday's Kathryn, Friday's Conner, and Saturday and Sunday me and Sarah. With work schedules this sometimes changes but we try to make it work.
The menu is only a guide if I have left overs that need to be used a meal may be bumped for the leftovers. If I find a great price on a different cut of meat I'll get it and fit it in somewhere. Most of our meals are chicken and ground beef based.
There is also a bit of a theme to the days
Sunday- is a meal that takes a lot of effort and time
Monday- is Mexican based
Tuesday- is crock pot and odd meals the kids like
Wednesday- is grill based meals
Thursday- is pasta
Friday - is pizza
Saturday - is soup, salad and bread. The soup and bread I make up in the morning before the day gets busy.

Tuesday- Beef Stew
Wednesday- Spidie Chicken w/ rice and green veggie
Thursday- Ravioli w/ white and red sauce
Friday- Pizza, and fresh veggies

Monday- Chicken Fajita
Tuesday- Sloppy Joes w/ French Fries
Wednesday- Grilled Chicken w/ rice and veggie
Thursday- Cheesy shells w/ tuna and peas
Friday- Pizza and fresh veggies
Week C
Sunday- Mini Meatloaf
Monday- Chicken Enclidia
Tuesday- Chicken and Biscuits
Wednesday- BBQ Chicken w/ sides
Thursday- Beef Risotto w/ green side
Friday- Pizza with veggies
Saturday- Chicken Noodle soup
Week D
Sunday- Chicken Parmesan
Monday- Taco Salad
Tuesday- Honey and Sesame Chicken
Wednesday- Hamburger w/ mac salad

Sunday- Turkey pot pie or chicken Cordon blue
Monday- Taco's
Tuesday- Tuna Casserole w/ green salad
Wednesday- Italian Sausage or Chicken Sausage w/ rice and green veggie

Friday- Pizza w/ salad
Saturday- Chili w/ bread and salad

Menu Plan Monday 1/21
This week's Dinner menu plan:
Sunday- Chinese Chicken, white rice, fried rice, stir fry veggies, fresh veggies ( celery, carrots, broccoli) , and sweet and sour sauce.
Monday- Sloppy Joes, green beans, baked potatoes sweet potatoes fries.
Tuesday- Baked Chicken, fresh veggies, rice, corn
Wednesday- Fridge Vegetable soup - made out of all the leftover veggies in the fridge.
Thursday- Spaghetti and meatballs as we didn't get to eat it last week.
Friday- as always is pizza night, we use the frozen pizza crusts that you can buy from Sam's club bakery dept about 18 dollars for 16 full size pizza crust. The toppings each week vary based on the left overs in the fridge, some times there is ham or pepperoni or chicken.

Menu Plan Monday
Sunday- Meatloaf, corn, baked sweet potatoes, baked potatoes.
Monday- spinach and ham quiche made with eggs from these lovey girls , fruit salad
Tuesday- baked chicken and rice with green beans

Thursday- spaghetti with meatballs, bread, fruit

Menu planning for March Part 2
I could not only plan dinners I also had to plan breakfasts and lunches. For breakfasts I looked at my mornings and based a plan off of them.
Breakfast:
Sunday- Muffins for many reasons a few being they can be eaten in the van on the way to church for the sleepy heads in the house, if I make enough I can stash some away for lunches, and Sunday mornings I am usually the only one up for about 2 hours before the rest of the house rises so plenty of time to bake.
Monday- Bagels and cream cheese , it's a Monday morning and there is more then one kid eating on the way to the bus.
Tuesday- Pancakes, by time of the week mornings are usually going better for both the kids and myself.
Wednesday - Cereal mostly because this is the morning that I try to schedule Doctor and Denis it appts for.
Thursday- Eggs and toast or cereal
Friday- french toast sticks, I buy them from Sam's club and they do take up a lot of room in the freezer but they make a easy breakfast.
Saturday- is waffles I make them when I get up and under cook them a bit, so when the kids wake they can place them in the toaster. I try to make enough to also freeze for a quick weekday breakfast. But for some reason no matter how many I make they all get eaten.
Lunches-
School day lunches are pb and Jelly, fruit, snack ( homemade or pretzels),and go-yurt. I do offer options on Monday they can also have salad, Tuesday tuna is a choice, and almost any day they can also choose ham, turkey, or salami.
Weekend lunches and or non- school days-
Saturday- is leftover pizza from Friday and any other leftover in the fridge
Sunday- is leftover soup from Saturday dinner
If for some reason there are no leftovers then we do grilled tuna or ham, or ramen soup.

Menu Planning for March- part 1
I would like to say that I have found the perfect plan for feeding this family of mine, but that would be a lie. Each season is different in what works for me and for them.
I was able to plan the next five weeks of meals out and bought all the food needed to prepare them as one of the issues right now is finding time to shop. Since it is winter, trying to find a day that the weather is nice enough for the drive to the store, the kids don't need me after-school and that I have time to get home before dark is hard if not next to impossible.
I figure 5 weeks was good as that is about how much food my freezer can hold and spring is just around the cornor, and before you ask I will be sending the husband to get milk at the store as needed. I really don't like to ask him pick up more then that as he already works a 10 hour day.
I have looked at our week as it stands and made the menu based activies and who's home for dinner on a certain night.
Sunday- A nice meal that takes time to cook as this is day that after church in the morning we normally do not have much to do.
Monday- is food with a Mexican flavor
Tuesday- is a crock pot meal as this is a day that I do a lot of dropping off and picking up right around dinner time.
Wednesday- for this month is soup at church and leftovers at home if anyone is still hungry.
Thursday- is pasta, this day my husband who is not a fan of pasta is not home for dinner, so we have pasta.
Friday- is Pizza, we buy the pre-baked crust from Sam's ( 14 to a case for about 15ish dollars) and Conner is the pizza maker around here.
Saturday- is soup/ stew day what recipe I'll make that day I don't know until Friday. I base it on what is happening on Saturday does it need to be in a crock pot, pressure cooker, or is there time to make it on the stove-top and what is leftover in the fridge that can make it's way into a soup.

Monday-
Hot dogs and mac and cheese w/ veggies and dip
We are traveling home this day and needed a simple easy to make meal.
Tuesday-
meatloaf and Crock pot Baked Potato w/ veggie
Meatloaf is a freezer meal ready to be placed in the oven and the crock pot baked potatoes are so yummy and easy to make.
Wednesday-
Turkey w/ mashed potato stuffing and peas
Thursday-
Potato Soup, turkey sandwiches
I will make enough potato soup to be able to frezze some for another day.
Friday
Sloppy Joes w/ rice and green beans
Saturday
Spaghetti w/ meat sauce, bread and salad.
Sunday
Chicken Enchiladas
This meal I will also make extra for the frezzer.

Menu Plan Monday- Camp Menu
This menu really is for next week when we head out to camp with our family, we do have a propane stove and fridge in the cabin plus a grill and the fire pit. We will be feeding each day between 9-14 kids and 6-9 adults depending on who is at camp that day. Three cabins and lots of family make for a great week.
There will be fruit and veggies out all day for the kids to eat, plus lots of cool snacks like marshmallows, smores, trial mix, and so on.
Sunday-
Breakfast and Lunch at home
Dinner- Hamburgers, corn on the cob, baked beans
Monday-
Breakfast- Pancakes and sausage, juice
Lunch- sandwiches
Dinner- Grilled BBQ chicken, salt potatoes, green beans
Tuesday-
Breakfast- French Toast
Lunch- sandwiches
Dinner- Taco's - ground beef, lettuce, tomato, taco sauce, hard and soft shells ( ground beef pre-cooked at home. frozen, warm in crock pot)
Wed-
Breakfast- Biscuit eggs sandwich, w/ sausage and cheese
Lunch- Sandwich
Dinner- Spaghetti and meatballs, w/ salad and garlic bread ( meatballs and sauce done in crock pots)
Thursday-
Breakfast- Eggs w/ hash browns
Lunch-sandwiches
Dinner- Chicken and Biscuits , ( chicken in crock pot)
Friday-
Breakfast- Pancakes
Lunch- sandwich
Dinner- Chicken speides, corn, salt potatoes
Saturday-
Breakfast- Leftovers/ Cereal
Lunch- Sandwhices
Dinner- Spider dogs ( aka Hot dogs), pasta salad, chips

Menu Plan Monday 7-11- Summer menu Plan
Time to get back in the saddle with meal planning, over the last two weeks we have packed up and returned home from OK City, unpacked at home and have tried to get back to normal life.
I have finished up our three week dinner plan for Summer, for a winter menu I try to do 4 weeks, but 3 is enough for summer as there are more interruptions to the meal plan . Like this month we are going camping for a week, and I am going to my mom's for a week. This menu is for July, August, and September, switching to a winter menu in October to April. This week we are on week 2.
Week 1
Sunday- Taco's
Monday- Chicken Alfredo
Tuesday- Hamburger Helper or ground beef, egg noodles, brown gravy
Wed- Chicken Spedies, w/ baked potato, and salad ( grill meal, w/ potatoes in crock pot)
Thursday- Bratwurst w/ saurgart, Chicken sausage w/ rice ( grill meal )
Friday- Chicken ( flatted and grilled) served topped with ham and Swiss on a roll w/ lettuce and tomato. Pasta Salad ( grill meal)
Saturday- Beef Strogaff w/ egg noddles ( crock pot meal )
Week 2
Sunday- Taco's
Monday- Tortilli w/white sauce
Tuesday- Sloppy Joes w/ french fries
Wed- Grilled chicken w/ buttered noodles ( grill meal)
Thursday- Polish sausage w/ quiona and corn
Friday- Chicken Sand which ( grilled) w/ mac salad ( grill meal)
Saturday- Cube steak w/ salt potatoes
Week 3
Sunday- taco's
Monday- Ravioli
Tuesday- Hamburgers, chips
Wed- Teriyi chicken w/ rice
Thursday- Italian Sausage ( hot dogs for some), w/ potatoes
Friday- Chicken w/ potatoe salad
Saturday- Steak w/ quiona and corn
Lunch menu for summer when the kids are out of school is a hot meal, unless we are out and about. FM is a meal from the freezer, CP is crock pot
Week one
Sunday- waffle brunch after church
Monday- Grilled Cheese
Tuesday- Mac and Cheese ( CP)
Wed- Potato soup ( FM and CP)
Thursday- french bread pizza (FM)
Friday- Meatballs and pasta ( CP)
Saturday- Leftovers
Week Two
Sunday- waffle brunch
Monday- Grilled tuna
Tuesday- Mac and cheese ( CP)
Wednesday- Chicken Noodle soup ( CP)
Thursday- Calzones w/ dip

Saturday- Leftovers
Each meal for Lunches and Dinners also has a veggie tray with in season veggies, and a fruit tray with in season fruits.
I also try to do dessert in the summer as the husband likes them and the kids are more active

Monday- Jello
Tuesday- Ice Cream, Shortcake w/ berries
Wed- Cobber or crisp
Thursday- Brownies, cake
Friday- Fruit smoothie
Saturday- pudding, cookies

We are currently in Oklahoma City for a month, living in temp housing while my husband goes to school here. I do have a full kitchen so a regular menu to share, I do not have all my favorite kitchen toys with me so the options are a bit limited.

I really need to get back to menu planning agian, so here we go.
Dinners:
Monday- chicken and bisquits with carrots and rice, fresh fruit for dessert ( pears and strawberries)
Tuesday- Stuffed Shells, w/ salad made with spinach, iceburg, chesse, tomato. Dessert - apple crumble
Wednesday- Beef Veggie Soup, bread, and salad made with spinach, romaine, feta cheese, cranberries, walnuts. Dessert - fresh fruit ( melon and blueberries)
Thursday- Hamburgers, w/ maconrini salad Dessert- cake
Friday- Chicken Taco's, with tomaoto, lettuce, cheese, sour cream, and corn, Dessert- Icecream
Saturday- Kathryn's Un Birthday , bagel pizza w/ fresh veggies and dip
Sunday- Sweet and Sour chicken w/ rice w pinapple dessert- banana bread
Lunches are packed for the kids and husband and left overs for me.
Breakfasts are oatmeal packets, cearl, bagels w/ cream cheese for the kids, egg burttio for me.
Sat - brunch - Pancakes, sauage, eggs, and juice
Baking goals for the week:
Banana muffins, blueberry muffins, and peanut butter cookies

Tuesday- Ham that we didn't eat on Sunday because DH took us out to eat, with cheesy potatoes, green beans, salad, and melon
Wednesday- Turkey Pot Pie from the freezer, salad, rice, and oranges
Thursday- Chicken Fajitas ( freezer meal ), leftover rice from Wed., and salad
Friday- Chicken and dumplings , with salad and cake.
Saturday- Leftovers
Sunday- Roast beef w/ potato and green beans

Menu Plan Monday 1-10
Monday- Baked Ziti, salad, and bread and apples for dessert
Tuesday- Cheesy rice and beans, salad, and pineapple
Wednesday- Chicken and Biscuits w/ peas and carrots, applesauce
Thursday- Taco's, salad, fresh veggies and dip
Friday- Potato corn chowder with chicken added, bread, fresh veggies, and oranges
Saturday- I have a mega chicken cooking day planned for the freezer, so it is pizza for dinner

Menu Plan Monday- 1-3
What I have done to make menu planning easier is make up a winter menu with 4-5 different choices for each day.
Monday is pasta, Tuesday is beans, Wednesday is chicken, Thursday is Mexican, Friday is soup, Saturday leftovers, and Sunday is beef. Then each week I pick one thing for each day,or show the husband and get his input on what he would like to eat this week. Winter Menu Plan
We also are still working on including more veggies and fruits in our meals.
Monday- Ravioli w/ salad, and oranges
Tuesday-Cowboy Beans (with biscuits and corn) w/ salad and melon
Wednesday- Chicken and Stuffing w/ green beans and pineapple
Thursday- Beef Enchilada w/ salad and apples
Friday- Chicken and dumplings w/ salad and banana
Saturday- Leftovers
Sunday- Meatloaf w/ mashed potato, peas, salad, melon
Breakfast - this is a bit up in the air, but cearl, muffins, pancakes, and so on.
Lunches- this week are once again Packed Lunches

Menu Planning Monday Dec 27
This week we are working on making some changes to our diet as a family. I learned long ago that it is a waste if the kids won't eat it, so we are making these changes slowly, testing each change as we go along. Since the kids have no school this week some of the bigger changes are breakfast, and since this week is also a shopping week adding some more fruits and veggies.
Breakfast:
Monday- Baked oatmeal with apples, juice, and a banana
Tuesday- Blender Waffles or pancakes, 1/2 apple, orange juice
Wednesday- Cearl , milk, banana
Thursday- Eggs, toast, pears, juice
Friday- french toast, cantaloupe, juice, milk
Saturday- mom's choice
Sunday- Muffin, banana, milk, juice
Dinner-

Menu Plan Monday 12/20
My college aged son who is home for break requested that we not have chicken this week, as that is all he has eaten for 3 months. So this weeks menu is heavy on the beef , there is a bird in the menu but it's a turkey.
Dinner-
Monday- Spaghetti and meatballs, stuffed pepper
Tuesday- Meatloaf and mashed potatoes, corn
Wednesday- Hamburgers and Mac and cheese, carrots
Thursday- Sloppy Joe's and French Fries, green beans
Friday- Potato and Corn Chowder, cheese and crackers,
Saturday- Turkey, stuffing, potato, veggie, cranberry sauce
Sunday- Leftovers
Breakfast-
Monday- Wednesday- cereal as the kids are still in school
Thursday- egg burritos
Friday- Waffles
Saturday- Daddy cooks- eggs, hash browns, sausage, toast, croissants , juice, hot coco
Sunday- Muffins
Lunches-
Monday- Wednesday - Packed Lunches
Thursday- leftovers and/ or ramen noodle soup
Friday- pasta and beans
Saturday- cheese and crackers, veggies and dip, tea sandwiches - since breakfast is more of a brunch and dinner is earlier then normal.
Once again highlighted items are ready to go meals or meal parts from the freezer.

Menu Plan Monday
This is my first Menu Plan Monday
Dinner Plan
Monday- Dutch Baby w/ applesauce this is the first time I am making this and if it turns out as I hope it does then I will post the recipe on Tuesday.
Tuesday- Three bean Chili w/ rice , cornbread w/ honey butter
Wednesday- Potatoe / Corn Chowder w/ home made bread
Thursday- Chicken and gravy, over bisquits w/ veggie
Friday- Family movie night and dinner out at school.
Saturday- Chicken Taco's w/ Mexican rice and beans
Sunday- Roast Beef, Applesauce, potatoes, green beans, bread
Breakfast Plan
School Days- cearl, bagels w/ cream cheese
Saturday- Homemade Waffles w/ strawberries
Sunday- Pumpkin Applesauce Muffins
And of course this month I am trying to prepare most of our meals out of the freezer and pantry, to free up space for the big re-stock shop in January / February, and this menu plan does that. Except for the cearl, milk, eggs, all of this is from the freezer or pantry shelves.
The meals highlighted are freezer meals that are pre- cooked and quick to the table.
